Historic Grande Marque founded in 1818. Flagship ‘Cuvée Nicolas François Billecart’: 60% Pinot Noir / 40% Chardonnay; Pinot from Verzenay + Mareuil-sur-Aÿ + Aÿ; Chardonnay from Mesnil, Chouilly, Avize; partial barrel fermentation (~25%); full malolactic; 10+ years sur latte; variable dosage. Also produces ‘Cuvée Elisabeth Salmon’ rosé. Cellar Master: Florent Nys.

Cuvée Nicolas François Billecart (Tête de Cuvée) 60% Pinot Noir / 40% Chardonnay; Pinot from Verzenay, Mareuil-sur-Aÿ, Aÿ; Chardonnay from Mesnil, Chouilly, Avize; partial barrel fermentation (~25%); full malolactic; 10+ years sur latte; variable dosage (2.9g/L in 2008; 6g/L in 2006/1998). Gilman: “one of the slowest to unfold Têtes de Cuvées produced by any of the Grandes Marques.”
Cuvée Élisabeth Salmon Rosé Brut Millésime (vintage Rosé prestige cuvée) Consistent blend: 55% Chardonnay / 45% Pinot Noir; ~8–9% of Pinot is old-vine still red wine from Mareuil-sur-Aÿ estate vineyards. Percentage of barrel-fermented vins clairs varies by vintage. Low dosage (~3.8–7g/L depending on vintage). One of the finest vintage Rosé Champagnes produced. Three-vintage study from VFTC #120 Rosé aging feature:
- 2012: 95 — 9.5 years sur latte; 3.8g/L dosage; “all this outstanding wine needs is a bit more cellaring.” Drink 2030–2070+.
- 2009: 95 — 10 years sur latte; 7g/L dosage; “nicely at its apogee.” Drink 2025–2045.
- 2008: 95 — 17% barrel-fermented; 7g/L dosage; “just reaching its plateau of peak drinkability”; decades ahead. Drink 2025–2065+.
Also noted: an older NV Rosé Brut of unknown age (auction find from a deceased collector’s cellar) — complex, mature, still hanging on; “complexity of a very old Champagne”; 88 points.
Style Notes
Billecart-Salmon’s two prestige cuvées share a commitment to long sur latte aging and structural restraint. The Élisabeth Salmon Rosé is a model of how to age Rosé Champagne beautifully: consistent blending formula, low dosage, and a patient cellaring requirement that pays off handsomely. The 2008 at 17 years is “just reaching its plateau” — these are not quick-maturing wines.
