Traditional unoaked Chablis producer — all stainless steel. One of the purest mineral expressions of the appellation. Key premier crus include Montée de Tonnerre and Vaillons. Respected for consistency.

Style Notes
All wines at Louis Michel are raised exclusively in stainless steel — no oak whatsoever. The resulting wines are pure expressions of Chablis minerality without any textural or flavour interference from wood. Pristine, racy, and built for aging. The Montée de Tonnerre is the benchmark of this style.
2023 Vintage Notes (VFTC #115)
Visited January 21, 2025. Guillaume Michel noted that despite the vintage’s generous yields reputation, his Montee de Tonnerre and all grand crus had quite short crop levels from mildew. Harvest September 11–16. Petit Chablis, Chablis AC, and premier crus (Montmains, Forets, Butteaux, Vaillons, Vaulorent) all bottled November 2024; grand crus still in tank. Several premier crus “really quite open and delicious out of the blocks.” Anecdote: a Beaune restaurant owner praised Michel for “such beautiful wines, and they are still very fair with their prices.”
