Jean-Marc and Hugues Pavelot produce wines of notable elegance and precision from Savigny’s finest premier crus. The style is terroir-focused with an emphasis on freshness and the appellation’s characteristic light, bright character.
2023 Vintage Notes
Visited January 2025. Full range produced in the generous 2023 vintage. The premier crus (Guettes, Dominode, Narbantons) all showed excellent depth and the vintage’s characteristic fruit richness.
2024 Vintage Notes (Burghound #102)
Hugues Pavelot runs this 17 ha domaine, now certified organic as of 2024. “Not disastrous” but constant rain and mildew pressure created a “negatively reinforcing cycle.” Began harvest Sept 17; moderate sorting. Yields averaged 25 hl/ha. Potential alcohols 12.5–13%. Vinified carefully with ~20% whole clusters. Pavelot: “our ’24s are markedly better and more interesting than our ’21s.” Reds will be bottled under natural cork. Also has a small negociant operation under the name Hugues Pavelot.
2024 Scores (barrel):
- Savigny “Les Gravains” 1er (1.3 ha, two-thirds 70+ year old vines): (90-92) — punchy; solid size and weight; powerful, youthfully austere
- Savigny “Les Lavières” 1er (0.30 ha): (90-92) — “lovely sense of underlying tension”; stony, detailed; firm enough for a decade
- Savigny “La Dominode” 1er (2.2 ha, two-thirds 70–80 year old vines): (89-92) — overtly stony; surprisingly rustic finish (unusual for this wine)
- Savigny “Aux Guettes” 1er (1.5 ha): (89-91) — energy; mineral-driven; “pretty much a classic Guettes”
- Beaune “Les Bressandes” 1er (leased): (88-91) — reduced; not especially concentrated but attractive vibrancy; firm
- Aloxe-Corton “Les Cras”: (88-91) — fine quality for its level; worth checking out
- Savigny-lès-Beaune (villages): (87-90) — touch of tang on finish
