Domaine Servin

Overview

Domaine Servin is run by François Servin, who farms 32 hectares — one of the largest holdings in Chablis — including choice parcels in four grand crus (Blanchot, Bougros, les Clos, les Preuses) and six premier crus (Butteaux, les Forêts, Montée de Tonnerre, Monts de Milieu, Vaillons, Vaucoupins). He is also the largest owner in the exceptional villages lieu-dit les Pargues (11 hectares in a single parcel), which was pre-phylloxera premier cru quality but missed out on classification. His Bougros parcel is in the steeper lower section “Bougerots,” which produces more minerally-infused wines than the higher parcels (shared with Piuze and William Fèvre). Most wines are raised in stainless steel; Vaillons is 25% barrel-fermented; Montée de Tonnerre and Blanchot are all stainless.

Style Notes

Clean, precise Chablis that reflects each terroir faithfully. Servin’s philosophy matches oak use to terroir: Blanchot and Montée de Tonnerre in pure stainless, while Vaillons benefits from partial barrel fermentation. The result is wines that are crisp, minerally, and built for the cellar without being overly austere in youth. Excellent quality-to-price ratio, especially considering the grand cru holdings.

Five wines tasted, all impressive. Gilman praises the domaine as a prime example of good-value premier/grand cru Chablis.
