Domaine Testut
Overview
A family domaine in Chablis run by Cyril Testut, who has been in charge since 1998. The domaine farms 13 hectares, all hand-harvested — rare at villages level in Chablis. Top parcels are planted to vines 40–70+ years of age. Most wines are raised in stainless steel, with two exceptions: the grand cru Grenouilles (partially barrel-fermented in older casks) and the premier cru Les Forêts (Testut’s oldest vines, 70+ years). For these two cuvées, 30–50% may be barrel-fermented depending on vintage style. All 2022s rated excellent by Gilman (VFTC #114).
Appellations
- Chablis (villages “Côte de Bréchain,” premier crus Montée de Tonnerre/Vaillons/Forêts; grand cru Grenouilles)
Key Wines
- Chablis “Vaillons” — stainless; 93 pts in 2022; “outstanding Vaillons”
- Chablis “Montée de Tonnerre” — stainless; vines 60+ years; 93+ pts in 2022; “first class juice”
- Chablis “les Forêts” — 30–50% barrel-fermented; oldest vines 70+ years
- Chablis “Grenouilles” — grand cru; partially barrel-fermented in older casks
- Chablis “Côte de Bréchain” — villages; 92 pts in 2023 (already drinking with “impressive generosity”)
Style Notes
Cyril Testut tailors oak use to terroir: the Forêts and Grenouilles benefit from partial barrel fermentation, while Vaillons and Montée de Tonnerre are pure stainless to maximize minerality. The old vine parcels produce wines of notable concentration. Hand harvesting across the range reflects commitment to quality. Very good values in today’s Chablis market.
