Domaine William Fèvre

Overview

One of the largest and most important domaine holdings in Chablis, Domaine William Fèvre owns parcels across the full range of Chablis appellations including significant grand cru holdings. The domaine was purchased by Bouchard Père et Fils (itself owned by Henriot) in 1998. Despite the corporate ownership, quality has remained consistently high and the wines remain reference points across the appellation hierarchy.

Appellations

  • Chablis (Petit Chablis, villages, premier crus, grand crus)

Key Wines

  • Chablis grand crus: including Vaudésir, Les Clos, Bougros, and others from their substantial grand cru holdings
  • Wide range of premier crus and village Chablis

Style Notes

The wines are clean, mineral, and well-structured, with good aging potential across the range. The grand crus are serious cellaring candidates.

2023 Vintage Notes (VFTC #115)

Visited January 2025. Didier Seguier crafted “an absolutely superb lineup.” Along with Dauvissat’s wines, “the raciest and most tensile wines that I tasted from the region.” Only Petit Chablis and Chablis villages already bottled; everything else in stainless steel. Harvest began September 7th, focusing on young vines first; finished September 16th. Alcohol levels absolutely classic (12.8–13.2%). Raciness increases up the quality hierarchy.
